An exquisite smooth cheddar which is exceptionally simple to make! Indeed, even my sister who would not gobble the cheddar at first wound up adoring it! This is a safeguard recipe in our family, I have made it endlessly time once more. To cheddar or not to cheese...that is never the inquiry!
8 ½ cups whole milk
⅓ cup lemon juice
1 teaspoon salt (Optional)
Empty milk into a pan set over medium intensity. Heat milk until it registers 194 degrees F (90 degrees C) on a moment read thermometer, around 5 minutes. Eliminate from heat.
Mix lemon squeeze and salt gradually into warmed milk. Let stand until milk sours, 10 to 15 minutes.
Line a fine-network sifter with cheesecloth and spot it over an enormous bowl. Empty milk combination cautiously into the lined sifter. Let stand until a large portion of the fluid has depleted off the ricotta, around 15 minutes. Dispose of depleted fluid
