Crispy Cod with Charred Snow Peas & Creamy Herb Sauce

This recipe for crispy cod demonstrates how to prepare golden fish without deep-frying it, giving a traditional dish a healthier makeover. After patting it dry and dusting it with flour, sear it in a hot pan.

Cooking Ingredients

    • 3 tablespoons minced fresh herbs, such as chives, mint, basil and/or dill

    • 2 tablespoons buttermilk

    • 2 tablespoons mayonnaise

    • Pinch of salt plus 1/2 teaspoon, divided

    • ½ teaspoon ground pepper, divided

    • 1 ¼ pounds cod, cut into 4 pieces

    • 2 tablespoons white whole-wheat flour

    • 2 tablespoons grapeseed oil, divided

    • 1 pound snow peas, trimmed

Cooking Direction

    1. In a small bowl, whisk together herbs, buttermilk, mayonnaise, 1/4 teaspoon pepper, and a pinch of salt. Put aside.
    2. Using paper towels, pat the fish dry before adding the remaining 1/4 teaspoon pepper and 1/2 teaspoon salt. Toss in a medium bowl with flour.
    3. In a big nonstick skillet, heat up 1 tablespoon of oil over medium-high heat. Add the fish and heat for about 4 minutes, rotating occassionally, until the fish is cooked through and has a light brown color on all sides. Move to a platter.
    4. To the pan, add the snow peas and the remaining 1 tablespoon oil. In about a minute, cook until very faintly browned on one side. Stir and heat for a another minute or so, or until bright green and tender.
    5. With the sauce set aside, serve the fish and snow peas.
