Broiled Cod with Tomatoes & Herbed Mayonnaise

This quick and healthy dinner recipe for cod cooks in about 15 minutes. Its sliced tomatoes add a splash of color, and the mayonnaise that covers the fish tastes great with chopped herbs of your choice.

Cooking Ingredients

    • ¼ cup mayonnaise

    • 3 tablespoons chopped herbs such as basil, tarragon or cilantro

    • 1 teaspoon garlic powder

    • ½ teaspoon onion powder

    • ½ teaspoon salt, divided

    • ½ teaspoon ground pepper, divided

    • 1 ¼ pounds cod, cut into 4 portions

    • 2 medium tomatoes, sliced

Cooking Direction

    1. Set the rack four inches away from the heat source and turn the broiler on high. Put foil on the rim of a baking sheet.
    2. In a small bowl, stir together mayonnaise, herbs, garlic powder, onion powder, ¼ teaspoon salt, and ¼ teaspoon pepper. Remaining ¼ teaspoons of salt and pepper should be applied on both sides of the cod. Arrange the fish on the baking sheet that has been prepared, then coat each piece with the mayonnaise mixture. Add slices of tomato on top. For about eight minutes, or until the fish flakes easily, broil.
